1/2 cup pureed silken tofu + 1 tsp lemon juice per 1/2 cup Greek yogurtSilken tofu is high in protein and moisture, making it a good textural substitute. However, it lacks natural acidity, so lemon juice is added to simulate the tang and help activate baking soda or powder.
Puree tofu until very smooth and mix in lemon juice before incorporating. This substitute works best in recipes where slight flavor changes are acceptable.
